Turkey & Cauliflower Skillet: A Quick and Nourishing Dinner

It’s a one-pan recipe with lean ground turkey, cauliflower rice, courgette and Mediterranean herbs. Perfect if you’re looking for a protein-rich, low-carb meal that’s easy on digestion and ideal for balancing energy, hormones and blood sugar especially during perimenopause or menopause.
Ingredients (Serves 2)
250g lean ground turkey
200g cauliflower rice (roughly 2 cups)
1 courgette, diced
1 tbsp olive oil
1 tsp dried oregano
½ tsp garlic powder
Salt and pepper to taste
A handful of fresh parsley or basil to garnish
Optional: a squeeze of lemon juice
How to Make It
Heat the olive oil in a large frying pan and cook the ground turkey until browned.
Add the courgette, cauliflower rice, and all the seasonings. Stir and cook for around 5–7 minutes until everything is tender.
Sprinkle with fresh herbs and a little lemon juice if you fancy.
Serve warm. It’s perfect as a quick lunch or a light evening meal.
