Tofu, Basil & Courgette Fritters

Four golden tofu, basil, and courgette fritters served on a plate with dip, ideal for a light lunch or dinner.

I made these delicious fritters the other day, and they turned out so beautifully that I couldn't resist sharing! They're crispy on the outside and soft inside, perfect for a tasty lunch or a light dinner.

Ingredients (Serves 2):

  • 200g (7oz) firm tofu, drained and crumbled

  • 1 medium courgette, grated and squeezed to remove moisture

  • 1 egg or flax egg (for vegan option)

  • 2 tbsp chopped fresh basil

  • 1 tbsp ground flaxseed

  • 1 tbsp oat flour (or ground almonds)

  • Sea salt & freshly ground black pepper, to taste

  • Olive oil, for frying

How to Make:

  1. Mix all ingredients together in a bowl and let the mixture sit for 5 minutes to bind.

  2. Shape into small fritters.

  3. Heat olive oil in a pan and fry fritters for 3–4 minutes on each side until golden and crisp.

  4. Serve warm with your favourite yoghurt or avocado dip.
