Smoked Salmon and Avocado on Rye Bread

Start your day the right way with my simple and healthy Smoked Salmon & Avocado on Rye recipe. Quick, nutritious, and absolutely delicious!

 Ingredients:

         •       2 slices of rye bread

        •       1 ripe avocado (about 150g / 5 oz.)

        •       100g / 3.5 oz. smoked salmon slices

        •       1 teaspoon lemon juice (5 ml / 0.17 fl oz.)

        •       Fresh dill, chopped (to taste)

        •       Salt and black pepper (to taste)

        •       Optional: capers and red onion slices for garnish

 Method:

  • Start by toasting the rye bread slices until they are just golden and crispy. This will provide a sturdy base for the toppings

  • While the bread is toasting, halve the avocado and remove the stone. Scoop out the avocado flesh and mash it in a bowl with the lemon juice, salt, and pepper. The lemon not only adds flavour but also prevents the avocado from brownin

  • Spread the mashed avocado evenly over the toasted rye bread slices. Ensure it’s spread thoroughly to the edges.

  • Layer the smoked salmon slices on top of the mashed avocado. If you’re feeling fancy, you can roll or fold the salmon slices for added texture.

  • Garnish the smoked salmon with a sprinkle of chopped dill. The dill pairs beautifully with the salmon, enhancing its natural flavours.

  • If you like, add a few capers and thin slices of red onion on top for an extra burst of flavour.

  • Finish with a light sprinkle of black pepper.

  • Serve immediately and enjoy a heart-healthy, protein-rich breakfast that’s full of flavours and textures.
