Quinoa Salad with Avocado & Fresh Herbs
Here’s my easy, simple, and delicious quinoa salad recipe for a healthy, energising lunch!
Ingredients:
• 1 cup cooked quinoa
• 1 ripe avocado, sliced
• A handful of fresh spinach leaves
• 1 tbsp pumpkin seeds
• A sprinkle of fresh herbs (such as parsley or basil)
• A drizzle of olive oil
• A squeeze of lemon juice
• Salt & pepper to taste
Method:
1. Cook the quinoa according to package instructions and let it cool.
2. Toss the quinoa with spinach leaves and fresh herbs in a bowl.
3. Add the sliced avocado on top and sprinkle with pumpkin seeds.
4. Drizzle with olive oil, squeeze over lemon juice, and season with salt and pepper.
5. Mix gently, and enjoy this nourishing and satisfying meal!
