Green Lentil and Tofu Skillet: A Simple, Healthy Recipe

Ingredients:
• 300g (1 1/4 cups) Dry Green Lentils, rinsed
• 830ml (3 1/2 cups) Vegetable Broth
• 2 tsps Herbes De Provence
• 30ml (2 tbsps) Extra Virgin Olive Oil, divided
• 1 large Yellow Onion, sliced
• 450g (16 ozs) Tofu, cut into cubes
• 15ml (1 tbsp) Tamari
Directions:
Place the lentils in a large pot and cover with vegetable broth. Add more broth if needed.
Mix in the Herbes de Provence and cook over low heat for 35-40 minutes until lentils are tender.
Heat half the olive oil in a pan. Sauté the onion until softened and browned, about 6-8 minutes. Set aside.
In the same pan, add remaining olive oil and cook tofu over medium-high heat for 2-3 minutes until browned.
Add tamari and scrape the pan to mix all the flavours.
Stir sautéed onions into the cooked lentils.
Serve the lentils and top with tofu. Enjoy your delicious and healthy meal!
