Nutritious Veggie Chickpea Lunch

Ingredients
• 1 tsp Turmeric Powder
• 1 tsp Curry Powder
• 2 tsp Garam Masala
• 1/4 tsp Sea Salt
• 80 ml (1/3 cup) Crushed Tomatoes, canned
• 360 g (1 1/2 cups) Cooked Chickpeas
• 300 g (2 cups) Green Cabbage, thinly sliced
• 300 g (2 cups) Broccoli, cut into florets
• 60 ml (1/4 cup) Shallot, finely chopped
• 180 ml (3/4 cup) Vegetable Stock
• 1 tsp Nigella Seeds
• A handful of Parsley, for garnishing
• 1 Tbsp Pumpkin Seeds (optional), for topping
Instructions
In a large saucepan, heat the vegetable stock over medium heat. Once simmering, add shallots, broccoli, and cabbage. Cook this mix for 2 minutes.
Next, stir in the chickpeas, sea salt, crushed tomatoes, turmeric, garam masala, and curry powder, blending them well.
Let it cook for about 5 minutes, until the broccoli becomes bright and the cabbage tender.
Garnish with nigella seeds, and if you like, top with parsley and pumpkin seeds for added texture and flavor.
