Black Bean Quinoa Burgers
Try my easy Black Bean Quinoa Burgers for a healthy, meat-free meal. Packed with protein and flavour, they’re a great addition to any diet.
Ingredients:
• 400g (about 2 cups) cooked black beans, rinsed and drained
• 190g (1 cup) cooked quinoa
• 1 large onion, finely chopped
• 2 cloves garlic, minced
• 1 carrot, grated
• 1 red bell pepper, finely chopped
• 2 tbsp chia seeds mixed with 6 tbsp water
• 70g (½ cup) whole wheat breadcrumbs, or substitute with equal amounts of ground oats or almond flour for a gluten-free option
• 1 tsp ground cumin
• 1 tsp paprika
• ½ tsp ground coriander
• Salt and pepper, to taste
• Olive oil for frying
Instructions:
Mash the black beans in a large bowl. Mix in the quinoa, onion, garlic, carrot, bell pepper, chia gel, your choice of ‘breadcrumbs’, cumin, paprika, and coriander. Season with salt and pepper.
Shape the mixture into patties, about ½ inch thick.
Heat olive oil in a pan over medium heat. Fry the patties for about 5 minutes on each side until golden
Serve with a salad of your choice.
