Crunchy Almond and Seed Delight with Coconut Yogurt

 Ingredients:

         •       80 ml (⅓ cup) Almonds

        •       15 ml (1 Tbsp) Flaxseeds

        •       80 ml (⅓ cup) Sunflower Seeds

        •       80 ml (⅓ cup) Walnuts

        •       2.5 ml (½ tsp) Cinnamon

        •       7.5 ml (1½ tsps) Coconut Oil (melted)

        •       1.25 ml (¼ tsp) Sea Salt

        •       45 ml (3 tbsps) Unsweetened Shredded Coconut

        •       45 ml (3 tbsps) Hemp Seeds

        •       475 ml (2 cups) Unsweetened Coconut Yogurt or 240 ml (1 cup) Cottage Cheese

        •       Sliced Strawberries or berries of your choice

 Instructions:

         1.      Preheat your oven to 190°C (375°F) and line a baking sheet with parchment paper.

        2.      In a large mixing bowl, blend the almonds, flaxseeds, sunflower seeds, walnuts, cinnamon, melted coconut oil, and sea salt thoroughly.

        3.      Evenly spread this nutty mixture onto the baking sheet and bake for 8 minutes, stirring midway. Keep an eye out to prevent any burning.

        4.      Once baked, transfer the mixture to a bowl, adding in the shredded coconut and hemp seeds, and mix well.

        5.      Serve by equally distributing the coconut yogurt or cottage cheese, fresh strawberries or berries, and your freshly made granola into bowls.
