Protein-Packed Veggie Breakfast Bowl

This might not sound like a typical breakfast choice, but it’s an excellent way to kick off your day with a balance of blood sugar and a good dose of protein.

 Ingredients: 

        •       250 ml (1 cup) Cottage Cheese

        •       1/8 of a large Cucumber, chopped

        •       1/4 of a medium Red Bell Pepper, chopped

        •       15 ml (1 tbsp) Pitted Kalamata Olives, sliced

        •       1 stalk of Spring Onion, chopped

        •       A handful of Sunflower and Pumpkin Seeds

        •       15 ml (1 tbsp) Almonds, chopped

        •       5 ml (1 tsp) Extra Virgin Olive Oil (optional)

 Instructions: 

        1.      Evenly distribute the cottage cheese between bowls.

        2.      Garnish with the chopped cucumber, red bell pepper, Kalamata olives, spring onion, sunflower and pumpkin seeds, and almonds.

        3.      Drizzle with a teaspoon of extra virgin olive oil if desired.

        4.      Serve immediately and enjoy this nutritious start to your day!
