Zucchini Pizza Bites

If you want all the delicious pizza flavours without the heavy, processed carbs, these little bites are the perfect answer.
Quick, easy, and a brilliant way to enjoy more vegetables, they are ideal as a snack, a fun starter, or even a light lunch alongside a crisp green salad.

Serves 2–3

Ingredients:

  • 1 large courgette (zucchini), sliced into thick rounds

  • 2–3 tablespoons tomato sauce

  • 50g mozzarella cheese, shredded (or you can use vegan cheese)

  • Fresh basil leaves

  • 1 teaspoon olive oil

  • Sea salt and black pepper to taste

How to Make Them:

  1. Preheat the oven to 200°C / 400°F.

  2. Brush the courgette rounds lightly with olive oil and season with salt and pepper.

  3. Bake for 5–7 minutes until they are slightly tender.

  4. Remove from the oven and top each round with a little tomato sauce, shredded mozzarella, and a basil leaf.

  5. Return to the oven for a further 5 minutes until the cheese is melted and bubbling.

  6. Serve warm and enjoy!
