Mini No-Bake Carrot Cake Bites

If you love carrot cake but want something lighter (and much quicker), these no-bake carrot cake bites are a perfect option. They’re naturally sweet, gently spiced and made with wholesome ingredients. Whether you’re looking for a quick snack between meals or something to enjoy with a cup of tea, these little bites tick all the boxes. And best of all, they take just minutes to make, no oven required.

Mini No-Bake Carrot Cake Bites (makes 10–12)

Ingredients:

  • 1 medium carrot, finely grated

  • ½ cup (50g) oats

  • ¼ cup (30g) ground almonds

  • ¼ cup (30g) unsweetened desiccated coconut

  • 1 teaspoon ground cinnamon

  • 1 tablespoon nut butter (almond or cashew both work well)

  • 2 Medjool dates, chopped

  • 1 teaspoon vanilla extract

  • Pinch of sea salt

  • Optional: extra desiccated coconut or chopped nuts for rolling

Method:

  1. Add all ingredients to a food processor and blend until the mixture sticks together to form a slightly sticky dough.

  2. Roll the mixture into small bite-sized balls.

  3. If you like, roll them in extra coconut or crushed nuts for added texture.

  4. Chill in the fridge for 20 minutes before serving.
