Quinoa and Black Bean Salad

Quinoa and Black Bean Salad
Ingredients:
1 cup quinoa
2 cups water
1 can (15 oz) black beans, drained and rinsed
1 cup cherry tomatoes, halved
1 cup beets, diced
1 red bell pepper, diced
1 avocado, diced
1/4 cup red onion, finely chopped
1/4 cup fresh cilantro, chopped
Juice of 2 limes
2 tablespoons olive oil
Salt and pepper to taste
Instructions:
Rinse the quinoa under cold water. In a medium pot, combine quinoa and water. Bring to a boil, then reduce to a simmer, cover, and cook for 15 minutes or until the water is absorbed and the quinoa is tender. Let it cool.
In a large bowl, combine the cooked quinoa, black beans, cherry tomatoes, beets, red bell pepper, avocado, red onion, and cilantro.
In a small bowl, whisk together the lime juice, olive oil, salt, and pepper.
Pour the dressing over the salad and toss to combine.
Serve immediately or refrigerate for up to 2 days.
