Nutritious Seed Crunch

Welcome to a delightful treat that's both delicious and satisfying. This seed crunch is perfect for a quick snack. It's packed with wholesome seeds, a touch of sweetness, and an optional burst of flavour with cranberries. Don't forget to sign up for my 21-Day Reboot and Reset Programme starting on 24th June. Ingredients:

  • 65g (1/2 cup) pumpkin seeds

  • 65g (1/2 cup) sunflower seeds

  • 50g (1/3 cup) sesame seeds

  • 30g (1/4 cup) flaxseeds

  • 30g (1/4 cup) dried cranberries (optional)

  • 6 tbsp honey

  • 1 tbsp coconut oil

  • 1/2 tsp ground cinnamon

  • 1/4 tsp sea salt

Instructions:

  1. Preheat your oven to 180°C (350°F) and line a baking sheet with parchment paper.

  2. In a large mixing bowl, combine the pumpkin seeds, sunflower seeds, sesame seeds, flaxseeds, and dried cranberries (if using).

  3. In a small saucepan, heat the honey and coconut oil over medium heat until melted and well blended. Stir in the ground cinnamon and sea salt.

  4. Pour the warm honey mixture over the seed mixture and stir until all the seeds are well coated.

  5. Spread the mixture evenly on the prepared baking sheet, pressing it down gently to create an even layer.

  6. Bake in the preheated oven for about 15-20 minutes, or until the edges are golden brown.

  7. Remove from the oven and allow it to cool completely on the baking sheet. Once cool, break into pieces and enjoy!
