Tempeh and Asparagus Stir-Fry
Dive into a simple yet delicious Tempeh and Asparagus Stir-Fry, perfect for a healthy, high-protein, and low-carb dinner. This recipe combines the nutty flavour of tempeh with fresh vegetables and aromatic herbs, all cooked in one pan for ease and convenience.
Ingredients:
400g tempeh, cubed
200g asparagus, trimmed and cut into pieces
1 red bell pepper, sliced
2 tablespoons olive oil
2 garlic cloves, minced
1 tablespoon ginger, minced
2 tablespoons soy sauce or tamari
1 tablespoon sesame oil
A handful of fresh basil leaves, torn
A few sprigs of fresh thyme
Salt and pepper, to taste
Sesame seeds, for garnish
Instructions:
In a large pan, heat the olive oil over medium-high heat. Add the tempeh cubes, season with salt, and cook until golden.
Add garlic and ginger, cooking until fragrant.
Include the asparagus and bell pepper, cooking until just tender.
Pour over soy sauce and sesame oil, mixing well.
Stir in basil and thyme leaves, seasoning with salt and pepper.
Garnish with sesame seeds before serving.
