Quinoa & Black Bean Stuffed Zucchini

Embark on a culinary adventure with this scrumptious and nutritious Quinoa & Black Bean Stuffed Zucchini recipe! Perfect for those eager to blend health with taste, this dish is a delightful addition to your meal plans. Whether it’s a cosy family dinner or a special occasion, this recipe promises to be a crowd-pleaser.

 Ingredients: 

        •       100g (1/2 cup) Quinoa, dry and rinsed

        •       4 medium Zucchinis (Courgettes)

        •       2 tsps (10 ml) Extra Virgin Olive Oil

        •       350 ml (1 1/2 cups) Black Beans, cooked

        •       240 ml (1 cup) Salsa, plus more for topping

        •       Sea Salt & Black Pepper, to taste

 Instructions:

  • Start by cooking the quinoa as per the package instructions. Meanwhile, preheat your oven to 220°C (425°F) and line a baking tray with parchment paper.

  • Halve the zucchinis lengthwise and scoop out the centres. Discard the removed flesh.

  • Brush the inside of each zucchini half with olive oil and place them on the tray, cut side up.

  • Mix the cooked quinoa, black beans (cooked), and salsa in a bowl. Spoon this mixture generously into each zucchini half, creating a ‘boat’ of flavoUrs.

  • Optionally, top each filled zucchini boat with a little extra salsa for added zest.

  • Place the tray in the preheated oven and bake for 25-30 minutes, or until the zucchini is tender and the filling is lightly browned to perfection.

  • Once done, remove from the oven and allow to cool for a few minutes. Season with sea salt and black pepper to taste.

  • Serve these flavourful Quinoa & Black Bean Stuffed Zucchini Boats warm. They make a perfect main course or a side dish, promising a nutritious and satisfying experience.
