Ingredients:

  • 4 cups mixed salad greens

  • 8 ounces cooked and cooled green beans, trimmed

  • 2 cups cherry tomatoes, halved

  • 4 hard-boiled eggs, sliced

  • 1 cup Kalamata olives, pitted

  • 1 small red onion, thinly sliced

  • 2 cans (5 ounces each) tuna, packed in water, drained

  • 1/4 cup fresh parsley, chopped

For the Dressing:

  • 3 tablespoons extra-virgin olive oil

  • 2 tablespoons red wine vinegar

  • 1 tablespoon Dijon mustard

  • 1 clove garlic, minced

  • Salt and pepper to taste

Directions:

  1. In a large salad bowl, arrange the mixed salad greens as the base.

  2. Place the green beans, cherry tomatoes, sliced hard-boiled eggs, Kalamata olives, and red onion on top of the salad greens.

  3. Flake the drained tuna and add it to the salad.

  4. Sprinkle the chopped parsley over the salad as a garnish.

  5. In a small bowl, whisk together the olive oil, red wine vinegar, Dijon mustard, minced garlic, salt, and pepper to make the dressing.

  6. Drizzle the dressing over the salad or serve it on the side, allowing individuals to dress their own portions.
