Hummus, Spinach, and Sauerkraut Sandwich

 Whether you’re starting your day, looking for a midday boost, or winding down in the evening, this nourishing sandwich fits perfectly into any moment. It’s packed with vibrant flavours and healthful ingredients to energise your body and mind. Ideal for those bustling days or when you simply crave something delicious and revitalising.

Ingredients:

         •       34 slices of Wholegrain Bread or Sourdough

        •       8 1/2 cups (about 2 litres) Baby Spinach

        •       8 1/2 cups (about 2 litres) Hummus

        •       4 1/4 cups (about 1 litre) Sauerkraut, drained

        •       1 1/16 cups (about 250 ml) Hemp Seeds

        •       1 1/3 tbsp (20 ml) Turmeric

        •       Sea Salt and Black Pepper, to taste

        •       Parsley or Herbs of your choice, for garnish

 Directions:

  • In a mixing bowl, thoroughly blend the hummus, hemp seeds, and turmeric. Season with sea salt and black pepper according to your taste preferences.

  • Lay out one slice of bread and generously spread the hummus mixture over it.

  • Layer the sauerkraut and baby spinach on top of the hummus.

  •  If you like, sprinkle some parsley or your chosen herbs over the spinach for extra flavour.

  • Cover with another slice of bread, press down gently, and there you have it - your sandwich is ready to be enjoyed!
