Avocado and Cucumber Salad

This dish is a testament to the beauty of combining simple ingredients to create something truly magical. Imagine the creaminess of ripe avocados meeting the crisp, refreshing bite of cucumbers, all brought together with a zesty dressing.

Avocado and Cucumber Salad

 Ingredients:

         •       2 ripe avocados, peeled, stoned, and cubed

        •       1 large cucumber, peeled and diced

        •       2 tablespoons (30ml) fresh lime juice

        •       2 tablespoons (30ml) olive oil

        •       1/4 cup (60ml) fresh coriander, chopped

        •       Salt and pepper, to taste

        •       Optional: chilli flakes for a little kick

 Instructions:

  • In a large bowl, combine the cubed avocados and diced cucumber.

  • Drizzle with fresh lime juice and olive oil.

  • Add the chopped fresh coriander and toss everything gently to combine. Be careful not to mash the avocado.

  • Season with salt and pepper according to your taste. If you like, sprinkle a little chilli flakes for some heat.

  • Serve immediately, or chill for about 15-30 minutes in the fridge before serving for enhanced flavours.
