Crispy Bacon and Scrambled Egg Lettuce Wraps

 Ideal for a nutritious breakfast or lunch, these lettuce wraps are a fantastic blend of flavours. Catering to both meat eaters and vegetarians, they’re versatile for various dietary needs. Quick to prepare, they’re an excellent choice for any time of day!

 Ingredients:

         •       4 slices of bacon (or for a vegetarian option, use sliced mushrooms or tempeh)

        •       1 whisked egg

        •       1/4 of a medium iceberg lettuce, leaves separated

 Instructions:

  •  Fry the bacon (or mushrooms/tempeh for a vegetarian alternative) in a large frying pan over medium heat for 3-5 minutes or until crispy or golden brown. Keep a small amount of the bacon grease or add olive oil for the vegetarian version in the pan. Transfer the bacon/mushrooms/tempeh to a plate lined with kitchen paper.

  •  Pour the whisked egg into the pan. Stir and cook for 2-3 minutes, until the egg is completely scrambled.

  •  Chop the cooked bacon, mushrooms, or tempeh into small pieces.

  • Evenly distribute the scrambled egg and bacon/mushrooms/tempeh pieces onto the lettuce leaves.
