Chickpea Pancakes

These pancakes are great for putting all sorts of fillings in like roasted veg and goats cheese, tuna, tomato and avocado, turkey mince chilli, chicken and peppers etc

Chickpea Pancakes

Makes 4 pancakes

  • 140g chickpea flour

  • 250ml water

  • 1/2 tsp salt

  • 1 Tbsp fresh chopped rosemary

  • Unscented coconut oil for frying

    Directions

  • Combine the chickpea flour, water and salt with a whisk to make a thick batter.

  • Stir in the rosemary.

  • Leave to stand for 30 mins.

  • Stir the mix then fry like pancakes using the just a smear of coconut oil in the pan.

  • Serve with the topping of your choice and enjoy!
