Chia & Coconut Porridge

 Busy morning? This Chia & Coconut Porridge is your go-to for a quick balanced breakfast. Packed with fibre, healthy fats, and plant-based protein, it’s easy to make and keeps you feeling full and energised.

 Ingredients:

 • 3 tbsp chia seeds

 • 1/2 cup unsweetened coconut milk

 • 1/4 tsp vanilla extract (optional)

 • 1 tbsp shredded coconut

 • 1 tbsp chopped almonds or walnuts

 • Handful of fresh raspberries

  Method:

 1. In a bowl, combine chia seeds, coconut milk, and vanilla extract. Stir well.

 2. Cover and refrigerate overnight or for at least 2 hours to thicken.

 3. Top with shredded coconut, chopped nuts, and raspberries before serving.
