Carrot-Infused Cauliflower Rice Porridge

Ingredients:
• 240 ml (1 cup) Cauliflower Rice
• 1 Carrot, finely shredded
• 120 ml (1/2 cup) Canned Coconut Milk, full fat
• 120 ml (1/2 cup) Water
• 1/2 tsp Cinnamon
• 2 tbsp Pitted Dates, chopped
• 60 ml (1/4 cup) Unsweetened Coconut Yogurt
• 2 tbsp Pumpkin Seeds
• 2 tbsp Ground Flaxseed
Instructions:
Combine all the ingredients, excluding the coconut yogurt, in a small pot and bring to a boil.
Lower the heat to simmer and cook for seven minutes or until the liquid starts to thicken.
Turn off the heat and allow the mixture to sit for three minutes to set.
Pour the porridge into a bowl and garnish with the coconut yogurt. Ready to serve and enjoy!
