Cardamom and Tahini Granola
Today, I’ve got a special treat for you – a homemade granola recipe that’s not only scrumptious but also packed with nutrients to support your well-being, especially during midlife. This Cardamom and Tahini Granola is a delightful mix of wholesome oats, nuts, and seeds, all spiced up with the warm, aromatic flavour of cardamom. It’s perfect for a comforting breakfast or a midday snack.
Cardamom and Tahini Granola
Ingredients:
90g (1 cup) oats
60g (1/3 cup) mixed walnuts and pecans, chopped
22g (1 1/2 tablespoons) sesame seeds
60ml (1/4 cup) tahini
30ml (2 tablespoons) honey (optional)
1 1/2 teaspoons cardamom
A pinch of sea salt (optional, 1/4 teaspoon)
To serve:
Yogurt or milk of your choice
Fresh berries
Instructions:
Preheat your oven to 160°C (325°F) and line a baking sheet with parchment paper.
In a mixing bowl, whisk together the tahini and honey until well combined. Stir in the cardamom.
Add the oats, chopped walnuts and pecans, and sesame seeds to the bowl. Mix well until all the ingredients are thoroughly combined.
Spread the granola mixture evenly onto your lined baking sheet, and if you like, sprinkle a touch of flaky sea salt over the top
Bake in the preheated oven for 20 to 25 minutes, or until the granola turns a light golden brown. Remember to give it a stir halfway through to ensure even baking.
Remove from the oven and allow to cool completely. The granola will become crunchier as it cools. Once cool, break it into chunks.
Serve with your choice of yogurt or milk and top with a generous helping of fresh berries.
