Avocado and Feta Salad with Pomegranate Seeds

I wanted to share this easy avocado and feta salad which I just love. It’s full of the goodness of the avocados and pomegranate seeds and tastes delicious. It works well for lunch or dinner. I hope you enjoy it as much as I do.

Ingredients

1 ripe avocado

½ red onion (peeled)

250 g feta cheese

2 x 15ml tablespoons red wine vinegar

1 teaspoon sunflower seeds

2 tablespoons pomegranate seeds

1 tablespoons extra virgin olive oil

A handful of cherry tomatoes (optional).

Directions

Slice the red onion into half-moons and put this into a non-metallic bowl, pour the vinegar over and make sure all of the onion is covered. Cover and leave to steep (2 to 3 hours or longer is perfect but if you are in a rush 15 to 20 mins will do).

Divide the feta between 2 plates breaking it up into uneven pieces. Sprinkle it with the sunflower seeds.

Peel and remove the stone from the avocado, then cut the into long slices and arrange around the feta. Scatter with pomegranate seeds and chopped tomatoes and sprinkle some extra-virgin olive oil over. Serve with the onions, lifted from their juice. This can be served with some sourdough bread or a bowl of green salad. Enjoy!
