Tuna, Cheese and Spinach Stuffed Peppers

Here’s a recipe that’s as good for you as it tastes. It’s a creative way to enjoy tuna, cheese, and veggies all in one. It’s easy, delicious, and adds colour to your mealtime.

 Tuna, Cheese and Spinach Stuffed Peppers

 Ingredients:

         •       1 can Tuna (drained) — about 142g

        •       60ml (¼ cup) Feta Cheese (crumbled)

        •       60ml (¼ cup) Frozen Spinach (thawed, squeezed to drain)

        •       113g (4 oz) Mozzarella Cheese (shredded, divided)

        •       ½ Lemon (juiced and zested)

        •       15ml (1 tbsp) Fresh Dill (chopped, plus extra for garnish)

        •       A pinch of Sea Salt & Black Pepper (to taste)

        •       2 Medium Orange Bell Peppers (halved and deseeded)

        •       1 Medium Red Onion (finely diced) — the twist to our tale

 Method

  • Heat your oven to 200°C (400°F) and get a baking sheet ready with parchment paper.

  • Mix tuna, feta, spinach, half the mozzarella, lemon juice, zest, dill, and red onion in a bowl. Add salt and pepper.

  • Fill the bell peppers with this mix and top with the rest of the mozzarella.

  • Bake for 30-35 minutes until the cheese is golden and peppers are soft.

  • Finish with a sprinkle of dill.
