This dish is a beautiful blend of simple ingredients, bringing together the freshness of zucchini with the rich flavour of wild salmon. It’s a perfect example of how a few quality ingredients can create a meal that’s both nutritious and incredibly tasty. Ingredients:
• 2 tsp Extra Virgin Olive Oil
• 1/4 cup (60 ml) Red Onion, thinly sliced
• 1 large Zucchini, spiralized
• 1/2 Lemon, juiced (plus extra wedges for garnish)
• 1 tsp Italian Seasoning
• 4 oz (113 g) Canned Wild Salmon, drained and broken into large chunks
• Seeds and herbs of your choice, for garnish
Instructions:
1. Heat a frying pan over medium heat. Add the olive oil. Once hot, add the sliced onion and spiralized zucchini. Sauté for 2-3 minutes until softened, tossing occasionally.
2. Before serving, drizzle with lemon juice and sprinkle with Italian seasoning. Toss well.
3. Transfer to a serving dish. Gently top with the salmon chunks.
4. Garnish with extra lemon wedges and your choice of seeds and herbs.
