Zesty Brussels Sprout & Kale Salad: A Nutritious Delight

Last night, I enjoyed this Zesty Brussels Sprout & Kale Salad with some delicious chicken, and it was a perfect pairing! This salad, brimming with vibrant flavours, is not just a feast for the taste buds but also a nourishing choice for the body. The fresh, natural ingredients come alive with the tangy dressing, creating a dish that’s both invigorating and satisfying. Whether you’re enjoying it alone or alongside your preferred protein, like I did with chicken, it’s a versatile and wholesome addition to any meal.

Ingredients:

        •       3 tbsp Extra Virgin Olive Oil
        •       1/4 cup Freshly Squeezed Orange Juice
        •       2 tsp White Wine Vinegar
        •       1 tsp Dijon Mustard
        •       Sea Salt & Black Pepper, to taste
        •       3 cups Shaved Brussels Sprouts
        •       2 cups Finely Chopped Kale Leaves
        •       2 Small Navel Oranges, segmented
        •       3/4 cup Pomegranate Seeds
        •       1/2 cup Chopped Pecans
        •       A handful of Sunflower Seeds
        •       A handful of Fresh Parsley

Preparation:

        1.      In a jar with a lid, combine olive oil, orange juice, vinegar, mustard, salt, and pepper. Shake well until the dressing is emulsified.
        2.      In a large bowl, place the Brussels sprouts and kale. Drizzle a splash of dressing and massage the greens to soften.
        3.      Add orange segments, pomegranate seeds, and pecans to the bowl.
        4.      Pour the remaining dressing over the salad and toss to mix everything evenly.
        5.      Garnish with sunflower seeds and fresh parsley. It’s truly a delightful salad, especially when accompanied by a protein like chicken!
