Thai Mango Salad
This Thai Mango Salad, with its burst of flavours and nutrients, is a testament to the joy of eating well and healthily. Pair this salad with a protein source, and you have a meal that is balanced, nutritious, and sure to delight.
Ingredients
• 2 ripe mangoes, slices
• 1 medium cucumber, sliced
• 1 red bell pepper, thinly sliced
• 1/4 cup red onion, thinly sliced
• 1/4 cup fresh coriander, chopped
• 1/4 cup fresh mint leaves, chopped
• 1/4 cup roasted peanuts, crushed
• 1 tbsp sesame seeds (optional)
For the dressing
• 3 tbsp lime juice
• 1 tbsp soy sauce
• 1 tbsp fish sauce (optional, can substitute with additional soy sauce for a vegetarian option)
• 1-2 tsp honey (adjust based on your sweetness preference)
• 1 small clove garlic, minced
• 1 tsp fresh ginger, grated
• 1 red chilli, deseeded and finely chopped (adjust according to heat preference)
For the protein
• Grilled chicken breast or baked tofu slices
Instructions
In a large mixing bowl, combine the julienned mangoes, cucumber, red bell pepper, red onion, fresh coriander, and mint leaves.
In a separate small bowl, whisk together the lime juice, soy sauce, fish sauce (if using), honey, minced garlic, grated ginger, and chopped red chilli to create the dressing.
Pour the dressing over the salad and gently toss to combin
Garnish the salad with crushed peanuts and sesame seeds.
Serve the salad chilled with a side of grilled chicken breast or baked tofu slices for a complete meal.
