Sweet Potato Avocado "Toast"

Avocado toast is a popular breakfast or snack option that is easy to make and incredibly delicious. But if you're looking for something even healthier, why not try out this twist on the classic recipe? Instead of using bread as the base, use sweet potato slices instead!

Not only are sweet potatoes packed with vitamins and minerals, they also provide an extra crunchy texture that pairs perfectly with creamy avocado. This quick and easy recipe will give your avocado toast a healthy upgrade while still tasting just as good! Read on to learn how to make it.

Ingredients

  • 1 Sweet Potato

  • 1 Avocado, diced

  • 1/2 cup Walnuts, chopped 2 tbsp Avocado oil

  • Sea Salt

  • Sunflower seeds

  • Cream cheese (optional)

 Instructions:

1. Preheat oven to 400 degrees (200 Celsius)

2. Carefully slice sweet potatoes lengthwise into ⅓ inch slices.

3. Line a baking sheet with parchment paper and place sweet potato slices in a single layer and drizzle with avocado oil.

4. Bake for 15-20 minutes, turning halfway through until crisp on the outside and tender on the inside. Note: This can also be done in a toaster without the oil, it just takes several rounds of toasting on your toaster's darkest setting.

5. Remove from the oven and top with avocado, chopped walnuts and salt and pepper or any toppings you like. I like sunflower seeds. Its also great with some cream cheese on the slices. Serve immediately.

6.  Store cooked, (no topping) sweet potato slices in an airtight container in the refrigerator. Reheat in the toaster oven or on a baking sheet in the oven.
