Spinach and Egg Scramble

Ingredients

2 large eggs

1 cup (30g) fresh spinach leaves

1 teaspoon (5ml) olive oil

6 cherry tomatoes, halved

Pinch of salt and black pepper

Instructions

Prep the Ingredients:

  • Crack the eggs into a bowl, add a pinch of salt and pepper, and whisk until smooth.

  • Sauté the Spinach:

  • Heat olive oil in a non-stick skillet over medium heat. Add the spinach and cook for 1-2 minutes until wilted.

Scramble the Eggs:

  • Push the spinach to one side of the pan and pour in the whisked eggs.

  • Gently stir the eggs until scrambled and fully cooked, then combine with the spinach.

Add Tomatoes:
