Roasted Beetroots and Lentil Salad

This Roasted Beet and Lentil Salad is a perfect plant-based dinner option that's both nutritious and satisfying. The earthy sweetness of roasted beets pairs beautifully with the protein-rich lentils, making it a hearty and wholesome meal.

This dish is full of fibre, antioxidants, and plant-based protein, making it ideal for supporting overall health, particularly during menopause.

Ingredients:

  • 3 medium beets, peeled and cut into wedges

  • 1 cup (200g) green or brown lentils, rinsed

  • 4 cups (1 litre) water or vegetable broth

  • 2 tablespoons (30ml) olive oil

  • 1 tablespoon (15ml) balsamic vinegar

  • 1 teaspoon Dijon mustard

  • 1 garlic clove, minced

  • 1/4 cup (40g) walnuts, toasted and chopped

  • 2 cups (60g) arugula or mixed greens

  • Salt and pepper to taste

  • Optional: crumbled feta or goat cheese (if not strictly plant-based)

Instructions:

Roast the Beets:

  •  Preheat your oven to 400°F (200°C).

  • Toss the beet wedges with 1 tablespoon of olive oil, salt, and pepper.

  • Spread the beets on a baking sheet and roast for 35-40 minutes, or until tender, flipping halfway through.

Cook the Lentils:

  • While the beets are roasting, cook the lentils. In a medium saucepan, bring the water or vegetable broth to a boil.

  • Add the lentils, reduce the heat to a simmer, and cook for 20-25 minutes until the lentils are tender but not mushy.

  • Drain any excess liquid and set the lentils aside to cool slightly.

Prepare the Dressing:

  •  In a small bowl, whisk together the remaining 1 tablespoon of olive oil, balsamic vinegar, Dijon mustard, minced garlic, salt, and pepper.

Assemble the Salad:

  • In a large bowl, combine the roasted beets, cooked lentils, arugula or mixed greens, and walnuts.

  • Drizzle the dressing over the salad and toss gently to combine.

  • If using, sprinkle the crumbled feta or goat cheese on top.

Serve:

  • Serve the salad warm or at room temperature. This dish pairs well with crusty whole-grain bread for a complete meal.
