One-Pan Pork Chops with Green Beans, Sweet Potatoes, Broccoli, and Red Bell Peppers

 Enjoy a delicious and healthy one-pan dinner with these Pork Chops, Green Beans, Sweet Potatoes, Broccoli, and Red Bell Peppers. Packed with protein, healthy fats, and fresh vegetables, it’s perfect for a balanced meal. For a plant-based option, substitute the pork chops with marinated tofu.

 Ingredients

         •       4 Pork Chops (200g/7 oz each)

        •       500g (1 lb) Green Beans (trimmed)

        •       2 large Sweet Potatoes (peeled and diced)

        •       1 head Broccoli (cut into florets)

        •       1 Red Bell Pepper (sliced)

        •       3 tbsp Olive Oil (divided)

        •       2 cloves Garlic (minced)

        •       1 tbsp Fresh Thyme (chopped)

        •       1 tbsp Fresh Rosemary (chopped)

        •       Sea Salt & Black Pepper (to taste)

        •       Optional: 400g (14 oz) Marinated Tofu for plant-based option

 Instructions

         1.      Preheat the oven to 200°C (400°F). Line a baking sheet with parchment paper.

        2.      In a large bowl, toss the green beans, sweet potatoes, broccoli, and red bell pepper with 2 tbsp of olive oil, minced garlic, fresh thyme, fresh rosemary, sea salt, and black pepper. Spread them evenly on the baking sheet.

        3.      Place the pork chops on the baking sheet among the vegetables. Drizzle with the remaining olive oil and season with sea salt and black pepper.

        4.      For the plant-based option, substitute the pork chops with marinated tofu and follow the same instructions.

        5.      Bake in the preheated oven for 25-30 minutes, or until the pork chops are cooked through and the vegetables are tender.

        6.      Serve immediately and enjoy!
