Grilled Vegetable and Mediterranean Quinoa Salad
Ingredients
• Finely slice 65 g of red onion.
• Zest and juice one lemon.
• Halve and cut 400 g of courgette into 2cm pieces.
• Drizzle 1 tbsp of olive oil over the courgette.
• Cook 100 g of quinoa according to package instructions.
• Halve 160 g of baby tomatoes.
• Halve 60 g of black olives.
• Roughly chop 140 g of artichoke hearts (jarred).
• Roughly chop 20 g of parsley.
• Crumble 40 g of feta cheese.
Directions
In a large bowl, combine the red onion with lemon juice and add a pinch of salt. Set aside.
Preheat a griddle pan and coat the courgette pieces with olive oil, salt, and pepper. Grill the courgette for 2-3 minutes on each side until charred. Transfer to a plate lined with kitchen paper.
To the bowl with the onion and lemon juice, add the cooked quinoa, cherry tomatoes, olives, artichokes, parsley, and lemon zest. Mix well and season with salt and pepper to taste.
Serve the quinoa salad in bowls and sprinkle with crumbled feta cheese. Enjoy!
