Golden Roasted Chickpea and Avocado Toast
This Golden Roasted Chickpea and Avocado Toast is perfect for those busy mornings or a leisurely weekend brunch, this crispy roasted chickpea and avocado toast offers a crunchy, creamy texture paired with a symphony of spices.
Ingredients:
• 240ml (or 1 cup) Cooked Chickpeas
• 1 1/2 tsp Extra Virgin Olive Oil
• 1/2 tsp Cumin
• 1/4 tsp Garlic Powder
• 1/4 tsp Smoked Paprika
• 1/4 tsp Sea Salt (plus more for garnish)
• 1/4 tsp Ground Turmeric (for a golden touch and added health benefits)
• 1 Medium Avocado
• 2 slices Whole Grain Bread (toasted)
• 1/2 Medium Lemon (juiced)
• 2 tbsp Cilantro (chopped, optional)
Method:
Preheat your oven to 400ºF (205ºC) and line a baking tray with parchment paper.
On the tray, combine the chickpeas with olive oil, cumin, garlic powder, smoked paprika, sea salt, and the new addition, turmeric. Mix thoroughly to ensure each chickpea is beautifully coated.
Roast in the oven for 20 to 25 minutes, until they’re wonderfully crisp.
As they roast, spread the mashed avocado across your toast slices with grace.
Top with the spiced, roasted chickpeas, then drizzle over the lemon juice for a citrusy zing.
