Easy Quinoa and Beetroot Salad
Ingredients
• 3 medium beetroots, peeled
• 118 ml (½ cup) quinoa
• 45 ml (3 tbsp) balsamic vinaigrette
• 3 stalks of celery, chopped, including leaves
• 2 stalks of spring onion, sliced
• Sea salt and black pepper, to taste
• 60 ml (¼ cup) feta cheese, crumbled
• 60 ml (¼ cup) pumpkin seeds, toasted
• A handful of parsley, chopped (for garnish)
• 60 ml (¼ cup) sunflower seeds
Instructions
Start by boiling the beetroots in a large saucepan of water until tender, about 25 minutes. Once boiled, rinse under cold water and then chop.
Cook the quinoa as per its packaging instructions.
In a large bowl, whisk together the balsamic vinaigrette, chopped celery, and spring onions. Season with salt and pepper.
Stir in the cooked beetroots and quinoa, making sure they are well coated with the dressing.
Serve in bowls, sprinkled with crumbled feta cheese, toasted pumpkin seeds, sunflower seeds, and a garnish of fresh parsley.
This salad is a feast for the senses, combining earthy beetroots, fluffy quinoa, and a burst of flavour from the herbs and seeds. It’s perfect as a standalone dish or as a complement to your preferred protein.
