Easy One-Pan Salmon With Roast Asparagus And Leek

Make a healthy salmon dinner with this easy sheet-pan recipe. This lunch or dinner requires just one sheet-pan to make the entire meal. Not only will you have a quick clean-up, but you'll have a well-balanced brain boosting meal featuring tasty salmon and fresh veggies. Don’t forget to make some extra portions so you can have the leftovers for lunch the next day. 

Ingredients

  • 3 tbsp extra virgin olive oil (cold pressed)

  • 8 asparagus spears, trimmed and halved

  • 2 leeks. chopped

  • 2 handfuls cherry tomatoes

  • 1 tbsp balsamic vinegar

  • 2 salmon fillets, about 140g/5oz each

  • handful basil leaves

  • Handful of parsley

  • Salt and pepper to taste 

Directions

Heat the oven to 220C/fan 200C/gas 7. Put the leeks and asparagus and 2 tbsp of olive oil into an ovenproof dish, then roast for 10 to 15 mins until starting to feel soft.

Put in the cherry tomatoes and vinegar and nestle the salmon amongst the vegetables. Drizzle with the remaining oil and return to the oven for a final 10-15 mins until the salmon is cooked. Scatter over the basil leaves and parsley and serve everything straight from the dish. Enjoy!
