Dark Chocolate Covered Pecan Nuts
When you fancy something sweet and don’t want to reach for the processed refined snacks why not make your own dark chocolate covered pecans. They are a little sweet, a little salty, and perfectly crunchy! You'll love how easy they are to make with just 5 ingredients.
Ingredients
3 cups raw pecans (300 grams)
2 tbsp melted coconut oil or butter
a pinch of salt
8 oz dark chocolate at least 70% cacao, I use 85%.
Directions
Heat your oven to 300F or 150 Celsius
Line a baking sheet Parchment paper and spread the pecans out evenly. Add a little salt over them if desired. Bake for 10 to 15 minutes until just toasted (you don't want them to taste burnt) and allow the pecans to cool while you melt the chocolate
Microwave the dark chocolate on high for 30 second intervals, until the chocolate is melted.
In batches, add the pecans to the melted chocolate, and coat the pecans evenly. Using a slotted spoon, place the pecans back on the baking sheet and place the tray in the freezer for 5 minutes to allow the chocolate to harden. Enjoy!
Tips
You can use other nuts if you prefer. It works well with almonds or hazelnuts.
