Crisp Cucumber and Kimchi Rice Bowl

This Brown Rice & Edamame Bowl with a creamy avocado twist is all about simple, energising goodness. It’s a vibrant, nourishing choice for anyone aiming to boost their wellness effortlessly

 Ingredients:

         •       100g (1/2 cup) brown rice, dry and rinsed

        •       240ml (1 cup) water (for cooking rice)

        •       150g (1 cup) frozen edamame, ready to bring a splash of green

        •       1 medium cucumber, chopped into refreshing bites

        •       2 tablespoons cilantro, finely chopped, for that fresh zest

        •       2 green onions, chopped, adding a mild kick

        •       60ml (1/4 cup) kimchi, for a spicy, tangy twist

        •       15ml (1 tbsp) tamari sauce, to weave in a deep, umami flavour

        •       5ml (1/2 tsp) miso paste, blending rich flavours

        •       15ml (1 tbsp) rice vinegar, for a subtle tang

        •       A sprinkle of sesame seeds, for a nutty finish

        •.   1 avocado, sliced, to add creamy richness and heart-healthy fats (optional)

 Method:

  • Begin by cooking the brown rice as per the packet’s instructions, aiming for that perfectly fluffy texture.

  • While the rice simmers gently, bring a pot of water to a boil and add the edamame. Let it dance in the boiling water for 2-3 minutes until vividly green and tender. Drain well

  • For the dressing, whisk together the tamari, miso paste, and rice vinegar in a small bowl, creating a harmonious blend of flavours.

  • Now, the assembly: Divide the cooked rice into bowls, forming a nourishing base. Scatter the bright edamame, crisp cucumber, fiery kimchi, and aromatic green onion and cilantro evenly amongst the bowls.

  • Arrange slices of avocado on top for a touch of creamy indulgence.

  •  Drizzle the umami-rich dressing over each bowl, ensuring every bite is infused with flavour.

  •  Finish with a sprinkle of sesame seeds for a subtle crunch.
