Couscous Salad with Feta, Dates, and Parsley

Introducing a delightful Couscous Salad with Feta, Dates, and Parsley - a dish that’s as nourishing as it is flavourful. Whether you’re pairing it with your favourite protein or enjoying it on its own, this salad is sure to become a staple in your culinary repertoire.

 Couscous Salad with Feta, Dates, and Parsley

 Ingredients:

         •       900g (or 4 3/4 cups) Couscous (dry)

        •       550g (or 2 1/3 cups) Feta Cheese (crumbled) or vegan chesse

        •       550g (or 2 1/3 cups) Dates (finely chopped and pitted)

        •       150ml (or 2/3 cup) Parsley (chopped)

        •       80ml (or 1/3 cup) Lemon Juice

        •       A handful of sunflower seeds

        •       A handful of parsley for garnish

        •       Sea Salt & Black Pepper (to taste)

 Instructions:

         1.      Cook the couscous according to the package instructions. Once cooked, fluff it up with a fork to separate the grains.

        2.      Gently stir in the crumbled feta cheese, finely chopped dates, chopped parsley, and lemon juice into the warm couscous.

        3.      Season the salad with sea salt and black pepper to your liking. Add a handful of sunflower seeds for a crunchy texture and a boost of nutrients.

        4.      Garnish with additional parsley before serving to add a fresh, vibrant touch.

 This salad is incredibly versatile, making it perfect for a light lunch, a side dish, or even a wholesome main course when paired with your protein of choice.
