Cottage Cheese Pancakes

Start your day right with Cottage Cheese Pancakes: low in sugar, high in protein, and utterly delicious. Perfect for a nutritious, tasty breakfast or brunch.

Ingredients:

        •       200g (1 cup) low-fat cottage cheese
        •       2 large eggs
        •       50g (1/2 cup) almond flour
        •       1 tsp baking powder
        •       1/2 tsp vanilla extract (optional)
        •       A pinch of salt
        •       Olive oil or coconut oil, for frying
        •       Greek yogurt and fresh berries, for serving

Instructions

  • Blend the cottage cheese and eggs in a food processor until smooth.

  • Transfer the mixture to a bowl and stir in the almond flour, baking powder, vanilla extract, and a pinch of salt. Mix until you have a consistent batter.

  • Heat a non-stick frying pan over medium heat and brush with a little oil.

  • Pour small ladles of the batter into the pan, cooking for 2-3 minutes on each side or until golden and firm.

  • Serve warm with a dollop of Greek yogurt and a scattering of fresh berrie
