Cauliflower Rice with Coriander and Optional Cumin Seeds

Ingredients

  • 1 medium cauliflower

  • A generous handful of chopped coriander

  • Cumin seeds (optional), toasted

Instructions

  • Begin by removing the tough core and stalks from the cauliflower. Use a food processor to pulse the remainder into grains roughly the size of rice.

  • Transfer the cauliflower grains into a heatproof bowl. Cover the bowl with cling film, making sure to pierce a few holes in the film for ventilation. Microwave on high for 7 minutes. You don’t need to add any water, as the cauliflower will cook in its own moisture.

  • Once cooked, remove the cauliflower rice from the microwave and stir in the chopped coriander. If you fancy a bit of a kick, sprinkle over some toasted cumin seeds to your liking.
