Beef and Veggie Stir-Fry with Brown Rice

Enjoy this balanced, flavourful stir-fry that’s high in protein and packed with fresh veggies! Perfect for a filling lunch or dinner, and easily made vegan with tofu.

 Ingredients:

 • 100g lean beef strips or 100g firm tofu (for vegan option)

 • 1 cup mixed vegetables (like bell peppers, broccoli, and carrots)

 • 1 cup cooked brown rice

 • 1 tbsp olive oil

 • 1 tbsp soy sauce (or tamari for gluten-free)

 • 1/2 tsp garlic powder

 • 1/2 tsp ground ginger

 • Salt and pepper, to taste

 Method:

 1. Cook brown rice and set aside.

 2. Heat olive oil in a pan, and sauté beef or tofu until cooked through.

 3. Add mixed vegetables, garlic powder, ginger, salt, and pepper. Sauté until veggies are tender-crisp.

 4. Stir in soy sauce and cook for another minute. Serve over brown rice.

 A satisfying, nutritious meal that’s easily adaptable for everyone!
