Banana Biscuits

Banana Biscuits

Are you looking for a delicious and simple way to use up those extra ripe bananas sitting in your fruit bowl? I've got just the recipe for you! This flexible and nutritious banana treat is perfect for those who love a bit of creativity in the kitchen, and it's incredibly forgiving for the busy midlife woman who values health as much as convenience.

Ingredients:

 Bananas: 2-4 super ripe bananas

Almond flour: Sufficient amount to create a dough-like consistency with the mashed bananas

Optional add-ins: Sliced almonds, chocolate chips, raisins, coconut flakes, sesame seeds

Instructions:

  • Preheat your oven to 175°C (350°F) and line a baking sheet with parchment paper.

  • In a large bowl, mash the ripe bananas until smooth.

  • Gradually add the almond flour to the mashed bananas, mixing until the mixture forms a dough-like consistency that can be shaped into balls without spreading.

  • Stir in any of your chosen add-ins to make these bites your own.

  • Form small balls of the mixture and place them on the prepared baking sheet.

  • Bake in the preheated oven for 35-40 minutes, or until they are golden and firm to the touch. Keep an eye on them, as cooking times can vary depending on the size of your bites and the specific add-ins used.

Feel free to experiment by substituting the almond flour with protein powder for an extra protein boost, making them an excellent post-workout snack or a satisfying mid-afternoon energy lift.
