Kimchi Cream Cheese Toast with Poached Egg

 Start your morning with a burst of flavour! This delectable toast combines the zesty kick of kimchi with creamy cheese, topped with a perfectly poached egg. It’s a simple yet sophisticated breakfast that will power up your day with its delightful mix of tastes and textures.  Ingredients

         •       1½ tsp apple cider vinegar

        •       1 egg

        •       2 tbsp regular cream cheese

        •       30g (about ¼ cup) kimchi, chopped (see below recipe)

        •       50g (1¾ oz) sourdough bread, toasted

        •       Sea salt & black pepper, to taste

        •       1 stalk green onion, sliced and some parsley to top with.

 Instructions

  • Bring a pot of water to a rolling boil and add the vinegar.

  • Stir the water with a spoon to create a whirlpool.

  • Carefully add your egg to the water. Let it cook for 3-4 minutes, or until it’s done to your liking.

  • Use a slotted spoon to gently remove the egg from the water, placing it on a plate lined with a paper towel to absorb excess liquid.

  • In a small bowl, mix together the cream cheese and chopped kimchi.

  • Spread the cream cheese and kimchi mixture on the toasted sourdough bread.

  • Top with the poached egg, season with salt and pepper and garnish with sliced green onions and parsley.
