Grilled Lemon Herb Chicken Salad

 Hey there! Want a quick, tasty, and healthy meal? Check out this Grilled Lemon Herb Chicken Salad. It’s perfect for a nutritious lunch or a light dinner. And if you’re not a fan of chicken, no worries – just swap it with tofu. It’s equally delicious!

 Ingredients:

         •       4 chicken breasts (or a block of tofu – about 400g/14 oz)

        •       2 tablespoons (30 ml) olive oil, plus a bit more for grilling

        •       Salt and pepper, to taste

        •       Mixed salad greens (about 6 cups/150g)

        •       1 cup (about 150g) cherry tomatoes, halved

        •       1 cucumber, sliced

        •       1/2 red onion, thinly sliced

        •       1 avocado, sliced

 For the dressing:

         •       2 tablespoons (30 ml) lemon juice

        •       1 garlic clove, minced

        •       1 teaspoon (5 ml) Dijon mustard

        •       1 teaspoon (5 ml) honey (or maple syrup for a vegan option)

        •       1 tablespoon (15 ml) fresh chopped herbs (like parsley or basil)

        •       3 tablespoons (45 ml) olive oil

        •       Salt and pepper, to taste

 Instructions:

  •  Get your grill ready on a medium-high heat. Brush your chicken or tofu with some olive oil, sprinkle with salt and pepper, and grill. Chicken needs about 6-8 minutes on each side, while tofu needs about 3-4 minutes per side. Let them cool a bit before slicing.

  • In a large bowl, toss together the greens, tomatoes, cucumber, onion, and avocado.

  • For the dressing: In a small bowl, whisk together lemon juice, garlic, mustard, honey, herbs, and olive oil. Season with salt and pepper to taste.

  • Add the grilled chicken or tofu to your salad, pour over the dressing, and give it a good toss.
