Green Lentil and Tofu Skillet: A Simple, Healthy Recipe

 Ingredients:

        •       300g (1 1/4 cups) Dry Green Lentils, rinsed

        •       830ml (3 1/2 cups) Vegetable Broth

        •       2 tsps Herbes De Provence

        •       30ml (2 tbsps) Extra Virgin Olive Oil, divided

        •       1 large Yellow Onion, sliced

        •       450g (16 ozs) Tofu, cut into cubes

        •       15ml (1 tbsp) Tamari

 Directions:

  • Place the lentils in a large pot and cover with vegetable broth. Add more broth if needed.

  • Mix in the Herbes de Provence and cook over low heat for 35-40 minutes until lentils are tender.

  • Heat half the olive oil in a pan. Sauté the onion until softened and browned, about 6-8 minutes. Set aside.

  • In the same pan, add remaining olive oil and cook tofu over medium-high heat for 2-3 minutes until browned.

  • Add tamari and scrape the pan to mix all the flavours.

  • Stir sautéed onions into the cooked lentils.

  • Serve the lentils and top with tofu. Enjoy your delicious and healthy meal!
