Golden Roasted Chickpea and Avocado Toast

This Golden Roasted Chickpea and Avocado Toast is perfect for those busy mornings or a leisurely weekend brunch, this crispy roasted chickpea and avocado toast offers a crunchy, creamy texture paired with a symphony of spices.

 Ingredients:

         •       240ml (or 1 cup) Cooked Chickpeas

        •       1 1/2 tsp Extra Virgin Olive Oil

        •       1/2 tsp Cumin

        •       1/4 tsp Garlic Powder

        •       1/4 tsp Smoked Paprika

        •       1/4 tsp Sea Salt (plus more for garnish)

        •       1/4 tsp Ground Turmeric (for a golden touch and added health benefits)

        •       1 Medium Avocado

        •       2 slices Whole Grain Bread (toasted)

        •       1/2 Medium Lemon (juiced)

        •       2 tbsp Cilantro (chopped, optional)

 Method:

  •  Preheat your oven to 400ºF (205ºC) and line a baking tray with parchment paper.

  •  On the tray, combine the chickpeas with olive oil, cumin, garlic powder, smoked paprika, sea salt, and the new addition, turmeric. Mix thoroughly to ensure each chickpea is beautifully coated.

  • Roast in the oven for 20 to 25 minutes, until they’re wonderfully crisp.

  • As they roast, spread the mashed avocado across your toast slices with grace.

  • Top with the spiced, roasted chickpeas, then drizzle over the lemon juice for a citrusy zing.

  • Add an extra sprinkle of salt and cilantro if you’re feeling fancy. Serve immediately to enjoy the full spectrum of flavours!
