Cauliflower Bites with Greek Yoghurt sauce

 Discover the joy of my Cauliflower Bites with Greek Yoghurt sauce.  Easy to make and irresistibly tasty, it's perfect for a snack or as a delicious addition to any meal.

 Ingredients:

 For the Cauliflower Bites:

         •       1 large cauliflower, cut into florets

        •       120g (about 1 cup) of either plain flour, almond flour, or chickpea flour

        •       240ml (1 cup) water (adjust as needed depending on the flour choice)

        •       1 tsp garlic powder

        •       1/2 tsp salt

        •       1/4 tsp black pepper

        •       120ml (1/2 cup) hot sauce

        •       1 tbsp unsalted butter, melted

 For the Greek Yoghurt sauce:

         •       240g (1 cup) Greek yoghurt

        •       1 tbsp fresh dill, finely chopped

        •       1 tbsp fresh chives, finely chopped

        •       1 tsp garlic powder

        •       1 tsp onion powder

        •       Salt and pepper, to taste

 Instructions:

  • Preheat your oven to 220°C (425°F).

  • Line a baking sheet with parchment paper.

  • In a large bowl, choose one of the following flours and mix with the water (start with less water if using chickpea flour, and add as necessary), garlic powder, salt, and pepper to create a smooth batter:

  • Plain Flour: Provides a traditional batter base.

  • Almond Flour: Offers a nutty flavour and lower carb option. Adjust water to ensure the batter is not too thick.

  • Chickpea Flour: Adds extra protein and fibre. Begin with less water and adjust to achieve the desired consistency.

  •  Dip the cauliflower florets into the batter, ensuring each piece is well coated. Arrange the florets on the prepared baking sheet in a single layer.

  • Bake for 20-25 minutes, until the coating is golden and starts to crisp.

  •  While the cauliflower bakes, combine the hot sauce and melted butter in a small bowl. After the cauliflower is baked, toss the pieces in the hot sauce mixture until evenly coated. Return the cauliflower to the oven for an additional 5-10 minutes, or until they are crispy.

  •   For the Greek yoghurt sauce, mix together the Greek yoghurt, dill, chives, garlic powder, onion powder, and season with salt and pepper to taste.

  •  Serve the cauliflower bites with the Greek yoghurt sauce dip on the side.
